Polka Dots [pol·ka dots]

Polka dots are a fun addition to any outfit - if you don't currently own any, I suggest investing in some. With Spring right around the corner, you won't regret having a few bold dotted pieces to add to your bright, Spring colors.

strawberry scones

I adapted a raw scone recipe here. Last Sunday we got an awful amount of snow so I decided it would be best to stay inside all day and bake things, these scones being one of them. They might be one of my new favorite things to bake on Sundays.

ingredients:
- 1 cup almond flour {I made my own by grinding almonds in a food processor}
- 1 cup whole wheat pastry flower
- 1/4 teaspoon salt
- 2 organic eggs
- 1/4 cup agave nectar
- 1/2 cup chopped fresh strawberries
- 1/4 cup dried blueberries {or other dried fruit}
- 1/3 cup shredded coconut

instructions:
- preheat oven to 350*.
- line baking sheet with parchment paper
- in a small bowl, whisk eggs until combined and set aside
- in a large bowl, whisk the almond flour, whole wheat pastry flower, salt, and baking soda
- add the diced strawberries and dried fruit
- make a well in the center of your dry ingredients
- add the wet ingredients and with a rubber spatula, mix until thouroughly combined
- make a large mound of the dough in the center of the baking sheet
- bake about 20 minutes or until golden on top - make sure center is fully cooked

{note: these are best served warm with a little bit of honey, agave, peanut butter, or jam on the side}

february favorites

In the midst of all this Minnesota snow and slush that is most unwelcome, I've still managed to find some end-of-winter inspiration. I view February to be that awkward in-between month, after the holidays and before the Spring we are all anxiously anticipating. Retail stores {namely J.Crew} are all bringing in their new Spring product full of bright new colors and bold beachy prints. It's killing me a little.
